Ingredients
  

Gingerbread Sponge
  • 4 eggs room temperature
  • 0.75 cup brown sugar packed
  • 0.25 cup molasses
  • 1 tsp vanilla extract
  • 0.75 cup all-purpose flour
  • 1 tsp baking powder
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
Cream Cheese Filling
  • 8 oz cream cheese softened
  • 4 tbsp unsalted butter softened
  • 1 cup powdered sugar

Equipment

  • Jelly roll pan
  • Hand mixer or stand mixer
  • Mixing bowls

Method
 

  1. Beat eggs and sugar until thick and pale.
  2. Fold in molasses, vanilla, and dry ingredients.
  3. Bake until just set and roll warm cake in towel.
  4. Beat filling ingredients until smooth.
  5. Fill, re-roll, chill, and slice.

Notes

Dust with powdered sugar just before serving.
