Ingredients
  

Oatmeal Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
  • 3 cups old-fashioned oats
  • 0.5 cup holiday sprinkles red and green
Cream Filling
  • 0.5 cup unsalted butter softened
  • 1 cup marshmallow cream
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp heavy cream or milk

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat butter and sugars until fluffy; add eggs and vanilla.
  3. Whisk flour, baking soda, spices, and salt; add to wet mixture.
  4. Fold in oats and sprinkles; scoop onto baking sheets.
  5. Bake 10–12 minutes and cool completely.
  6. Beat butter, marshmallow cream, powdered sugar, and vanilla to make filling.
  7. Pipe or spread filling onto cookies; sandwich together to form cream pies.

Notes

Roll finished pies in extra sprinkles for a brighter Christmas look.
