  • 6 cups mixed greens
  • 2 oranges peeled and sliced
  • 0.5 cup pomegranate seeds
  • 0.25 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.5 cup candied pecans
Citrus-Honey Vinaigrette
  • 3 tbsp olive oil
  • 1 tbsp orange juice fresh
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Method
 

  1. Peel and slice the oranges; prepare pomegranate seeds and red onion.
  2. Place mixed greens in a large serving bowl and top with oranges, pomegranate, onion, feta, and pecans.
  3. Whisk olive oil, orange juice, lemon juice, honey, Dijon, salt, and pepper to make vinaigrette.
  4. Drizzle salad with dressing before serving.

Notes

For best texture, add dressing right before serving.
