Ingredients
  

Pretzel Dough
  • 1.5 cups warm water about 110°F
  • 2.25 tsp active dry yeast 1 packet
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour 480g, plus more for dusting
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 2 tbsp unsalted butter melted
Boiling Bath
  • 10 cups water
  • 2/3 cup baking soda
Cinnamon Sugar Coating
  • 0.5 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 4 tbsp unsalted butter melted, for brushing

Equipment

  • Stand mixer or large bowl
  • Large pot for boiling
  • Baking sheets
  • Slotted spoon or spider strainer
  • Pastry brush

Method
 

  1. Activate yeast: Combine warm water, yeast, and sugar in a bowl. Let sit 5-10 min until foamy.
  2. Make dough: Add flour, brown sugar, salt, and melted butter. Knead 5-7 min until smooth.
  3. First rise: Cover and let rise until doubled, about 1 hour.
  4. Mix cinnamon sugar: Combine sugar and cinnamon in a bowl.
  5. Shape: Divide dough, roll into ropes, form pretzel shapes, place on lined baking sheets.
  6. Boil: Boil pretzels in baking soda water 20-30 sec per side, drain, return to sheets.
  7. Bake: Preheat oven to 450°F. Bake 10-14 min until golden.
  8. Coat: Brush hot pretzels with melted butter, then coat in cinnamon sugar. Serve warm.

Notes

Boil in small batches to avoid overcrowding. Best enjoyed fresh and warm.
