- Activate yeast: Combine warm water, yeast, and sugar in a bowl. Let sit 5-10 min until foamy.
- Make dough: Add flour, brown sugar, salt, and melted butter. Knead 5-7 min until smooth.
- First rise: Cover and let rise until doubled, about 1 hour.
- Mix cinnamon sugar: Combine sugar and cinnamon in a bowl.
- Shape: Divide dough, roll into ropes, form pretzel shapes, place on lined baking sheets.
- Boil: Boil pretzels in baking soda water 20-30 sec per side, drain, return to sheets.
- Bake: Preheat oven to 450°F. Bake 10-14 min until golden.
- Coat: Brush hot pretzels with melted butter, then coat in cinnamon sugar. Serve warm.

Boil in small batches to avoid overcrowding. Best enjoyed fresh and warm.
