Method
- Preheat oven to 350°F (175°C). Prepare and pre-bake the pie crust if needed.
- In a saucepan, heat milk and cream to a simmer. Remove from heat.
- Whisk eggs and sugar until frothy. Add vanilla, cinnamon, salt, and nutmeg.
- Slowly whisk warm dairy into egg mixture to temper.
- Strain the mixture and pour into the pie crust.
- Bake for 40-45 minutes until edges are set and center jiggles slightly.
- Cool at room temperature for 1 hour, then refrigerate for 2 hours.
- Garnish and serve chilled or at room temperature.
Notes
For best results, use fresh spices and allow full cooling time for the custard to set properly.
