Ingredients
  

Salad
  • 2 cups cooked chicken breast diced
  • 1 apple diced
  • 1 cup red seedless grapes halved
  • 0.5 cup celery thinly sliced
  • 0.5 cup walnuts toasted and chopped
  • 0.25 cup red onion optional
Dressing
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Dice the cooked chicken into bite-sized pieces.
  2. Chop the apple, celery, grapes, and walnuts.
  3. In a bowl whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  4. Combine chicken, apple, grapes, celery, walnuts, and onion in a large bowl.
  5. Pour dressing over ingredients and mix gently until coated.
  6. Refrigerate for 30 minutes before serving.
  7. Serve chilled on lettuce leaves, sandwiches, or crackers.

Notes

For a lighter version substitute half the mayonnaise with Greek yogurt.
