Chocolate Gingerbread Cookies
  • 2.25 cups all-purpose flour
  • 0.25 cup cocoa powder
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.25 tsp nutmeg
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.33 cup molasses
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup mini chocolate chips optional
  • 0.5 cup granulated sugar for rolling

Method
 

  1. Whisk flour, cocoa powder, spices, baking soda, and salt in a bowl.
  2. Cream butter and brown sugar; add egg, vanilla, and molasses.
  3. Combine wet and dry ingredients; fold in chocolate chips if using. Chill 1 hour.
  4. Roll dough into balls and coat in granulated sugar.
  5. Bake at 350°F (175°C) for 9–11 minutes until crackly on top.
  6. Cool completely on a wire rack.

Chilling ensures thick, chewy cookies that don’t overspread.
