Ingredients
  

Curry
  • 1 lb white fish cut into chunks
  • 1 tbsp oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 1 can coconut milk
  • 0.5 cup broth
  • 2 limes juiced
  • 1 tsp lime zest
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
Rice
  • 1 cup jasmine rice
  • 2 cups water

Method
 

  1. Cook jasmine rice until fluffy.
  2. Sauté onion, garlic, and ginger.
  3. Add curry paste and cook briefly.
  4. Pour in coconut milk and broth.
  5. Add fish and simmer until cooked.
  6. Stir in lime juice and serve over rice.

Notes

Add lime juice at the end for best flavor.
