Ingredients
  

Base
  • 6 eggs large
  • 1 cup cottage cheese
  • 0.5 cup shredded cheese Gruyère or cheddar
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Add-ins
  • 0.5 cup bacon cooked and crumbled
  • 0.5 cup spinach chopped
  • 0.25 cup roasted red peppers diced

Method
 

  1. Preheat oven to 325°F and prepare a water bath.
  2. Blend eggs, cottage cheese, shredded cheese, salt, and pepper until smooth.
  3. Grease silicone muffin molds.
  4. Add fillings evenly into molds.
  5. Pour egg mixture over fillings.
  6. Bake for 25–30 minutes until set.
  7. Cool slightly before removing and serving.

Notes

Blend thoroughly for best texture and avoid overbaking for soft, creamy egg bites.
