Coq au Riesling

A classic Alsatian dish of tender chicken simmered in creamy Riesling white wine sauce with mushrooms.

Ingredients
  

  • 3 lbs chicken pieces bone-in
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 10 oz mushrooms sliced
  • 1.5 cups dry Riesling wine
  • 1 cup chicken stock
  • 0.75 cup heavy cream

Equipment

  • Dutch oven
  • Wooden spoon
  • Knife

Method
 

  1. Season chicken with salt and pepper.
  2. Brown chicken in butter and oil until golden.
  3. Cook onion, garlic, and mushrooms until soft.
  4. Stir in flour, then deglaze with Riesling.
  5. Add stock, return chicken, and simmer covered.
  6. Stir in cream and simmer until sauce thickens.

Notes

Serve with mashed potatoes or noodles for a complete meal.
