Ingredients
  

Flatbread Base
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 0.5 cup almond flour or all-purpose flour
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • salt and pepper to taste
Toppings
  • 0.25 cup marinara sauce low-sugar
  • 0.5 cup shredded mozzarella cheese
  • toppings like bell peppers, tomatoes, spinach optional
  • fresh basil for garnish, optional

Equipment

  • Blender or food processor
  • Baking sheet
  • Parchment paper
  • Spatula

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Blend cottage cheese, eggs, almond flour, garlic powder, Italian seasoning, salt, and pepper until smooth.
  3. Spread mixture onto baking sheet into a 1/4-inch thick flatbread shape.
  4. Bake for 10-12 minutes until firm and golden.
  5. Spread marinara sauce over the base.
  6. Add mozzarella and toppings.
  7. Bake another 8-10 minutes until cheese melts.
  8. Cool, garnish, slice, and serve.

Notes

Customize toppings for variety; store leftovers in the fridge for up to 2 days.
