Cottage Cheese Tiramisu

A lighter, high-protein twist on classic tiramisu using blended cottage cheese for an ultra-creamy filling, layered with coffee-soaked ladyfingers and cocoa.

Ingredients
  

Coffee Layer
  • 1.5 cups strong brewed coffee cooled
  • 2-3 tbsp coffee liqueur optional
  • 24-30 ladyfingers
Cream Filling
  • 500 g cottage cheese
  • 250 g mascarpone cheese optional
  • 0.75 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 cup heavy cream cold
  • 0.25 cup unsweetened cocoa powder for dusting

Equipment

  • Food processor or blender
  • Mixing bowls
  • Electric mixer
  • 9x9 dish or glasses

Method
 

  1. Cool brewed coffee. Add liqueur if using.
  2. Blend cottage cheese (and mascarpone if using) until completely smooth.
  3. Mix in powdered sugar and vanilla.
  4. Whip heavy cream to stiff peaks. Fold into cottage cheese mixture gently.
  5. Dip ladyfingers quickly in coffee and layer in dish.
  6. Spread half the cream over ladyfingers. Repeat layers.
  7. Refrigerate 6+ hours. Dust with cocoa before serving.

Notes

For maximum protein, use all cottage cheese and extra cream. Adjust sweetness to taste.
