Ingredients
  

Roasted Vegetables
  • 2 cups sweet potatoes cubed
  • 2 cups Brussels sprouts halved
  • 1 can chickpeas drained and rinsed
  • 2 tbsp olive oil
Base
  • 1 cup cooked quinoa
  • 2 cups kale chopped
Tahini Dressing
  • 0.25 cup tahini
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with oil and seasonings and roast until tender.
  3. Crisp chickpeas on a separate tray.
  4. Massage kale lightly with olive oil.
  5. Whisk dressing ingredients until smooth.
  6. Assemble bowls and drizzle with dressing.
