Method
- Preheat oven to 375°F (190°C).
- Cut a horizontal pocket into each chicken breast for filling.
- Season chicken inside and out with salt and pepper.
- Stuff each breast with brie, cranberry sauce, and thyme or rosemary. Secure with toothpicks if needed.
- Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.
- Add minced garlic and sauté 30 seconds.
- Transfer skillet to oven and bake 20–25 minutes until chicken reaches 165°F (74°C).
- Let rest 5 minutes before slicing and serving.
Notes
Do not overstuff to prevent filling leakage. Use creamy brie for best melt and flavor.
