Ingredients
  

Chicken & Filling
  • 4 boneless, skinless chicken breasts
  • salt and black pepper to taste
  • 4 oz brie cheese sliced
  • 0.5 cup cranberry sauce fresh or canned
  • 1 tsp fresh thyme or rosemary chopped
For Cooking
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic minced

  • Oven-safe skillet
  • Knife
  • Mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut a horizontal pocket into each chicken breast for filling.
  3. Season chicken inside and out with salt and pepper.
  4. Stuff each breast with brie, cranberry sauce, and thyme or rosemary. Secure with toothpicks if needed.
  5. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.
  6. Add minced garlic and sauté 30 seconds.
  7. Transfer skillet to oven and bake 20–25 minutes until chicken reaches 165°F (74°C).
  8. Let rest 5 minutes before slicing and serving.

Notes

Do not overstuff to prevent filling leakage. Use creamy brie for best melt and flavor.
