Ingredients
  

Loaf Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tbsp orange zest
  • 0.75 cup orange juice
  • 0.5 cup milk
  • 0.5 cup unsalted butter melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1.5 cups cranberries
Orange Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp orange juice
  • 0.5 tsp orange zest

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Mix orange juice, milk, butter, eggs, and vanilla in another bowl.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold cranberries into the batter.
  6. Pour batter into loaf pan.
  7. Bake 50–60 minutes until a toothpick comes out clean.
  8. Cool loaf completely before glazing.
  9. Mix glaze ingredients and drizzle over loaf.

Notes

Fresh or frozen cranberries work equally well for this recipe.
