  • 1 pound ground turkey
  • 4 cups dried bread cubes or stuffing mix
  • 1 cup dried cranberries chopped
  • 1 medium onion finely diced
  • 2 stalks celery finely diced
  • 2 cloves garlic minced
  • 1 cup chicken or turkey broth
  • 1 large egg beaten
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • salt and black pepper to taste
  • 2 tablespoons olive oil for sautéing
  • 0.5 cup chopped walnuts optional for crunch

Method
 

  1. In a large skillet over medium heat, heat the olive oil. Add the diced onion, celery, and minced garlic. Sauté for 5-7 minutes until softened and fragrant.
  2. In a large mixing bowl, combine the ground turkey, sautéed vegetables, dried bread cubes, chopped cranberries, parsley, sage, thyme, rosemary, salt, and pepper.
  3. Pour in the beaten egg and half the broth. Stir until the mixture comes together; add more broth if needed.
  4. Scoop out portions and form 1-2 inch balls. Place on a parchment-lined baking sheet.
  5. Bake at 375°F for 20-25 minutes until golden and cooked through.
  6. Let cool slightly and serve warm.

Notes

Use day-old bread for best texture. Adapt for gluten-free with GF bread.
