Ingredients
  

Pasta
  • 16 oz elbow macaroni
Creamed Spinach
  • 10 oz fresh spinach
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup milk
  • 4 oz cream cheese softened
Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Saucepan
  • Large skillet

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Sauté garlic in butter, add spinach and cook until wilted.
  3. Add cream, milk, and cream cheese to spinach. Simmer until smooth.
  4. Make a roux with butter and flour, whisk in milk, then add cheeses.
  5. Combine cheese sauce, creamed spinach, and pasta.
  6. Bake until bubbly and lightly golden, or serve stovetop.

Notes

Add a splash of milk when reheating to restore creaminess.
