- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Season diced chicken with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add chicken broth and heavy cream. Simmer for 2–3 minutes.
- Stir in parmesan cheese until melted and smooth.
- Add feta cheese and mix until creamy and slightly thickened.
- Add spinach if using and cook until wilted.
- Return chicken and pasta to the skillet. Toss until fully coated.
- Add reserved pasta water if needed. Garnish and serve warm.
Notes
Use freshly crumbled feta for the best creamy texture and flavor. Great for meal prep and easy weeknight dinners.
