Ingredients
  

Pasta
  • 12 oz penne pasta
  • 2 boneless skinless chicken breasts diced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Creamy Sauce
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 1 cup feta cheese crumbled
  • 2 cups fresh spinach optional
  • 2 tbsp fresh parsley chopped
  • extra feta cheese for garnish

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Season diced chicken with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant.
  5. Add chicken broth and heavy cream. Simmer for 2–3 minutes.
  6. Stir in parmesan cheese until melted and smooth.
  7. Add feta cheese and mix until creamy and slightly thickened.
  8. Add spinach if using and cook until wilted.
  9. Return chicken and pasta to the skillet. Toss until fully coated.
  10. Add reserved pasta water if needed. Garnish and serve warm.

Notes

Use freshly crumbled feta for the best creamy texture and flavor. Great for meal prep and easy weeknight dinners.
