Ingredients
  

  • 1 lb chicken breast or thighs diced
  • 2 cups mushrooms sliced
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp thyme fresh or dried
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Knife

Method
 

  1. Sauté onion in butter and oil until soft.
  2. Add garlic and mushrooms; cook until browned.
  3. Add chicken, season, and cook briefly.
  4. Stir in flour and slowly add broth.
  5. Simmer 10–15 minutes until thickened.
  6. Stir in cream and heat gently.

Notes

Do not boil after adding cream.
