Chicken Bake
  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach
  • 2 cups mushrooms sliced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 3 cloves garlic minced
  • 0.5 cup parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Sear chicken in olive oil for 2–3 minutes per side.
  4. Sauté mushrooms in butter for 5 minutes.
  5. Add garlic and spinach and cook until wilted.
  6. Add cream and chicken broth and simmer.
  7. Stir in Parmesan cheese.
  8. Place chicken in baking dish and pour sauce over.
  9. Top with mozzarella cheese.
  10. Bake for 25–30 minutes until chicken is cooked through.

Notes

Serve with rice, pasta, or roasted vegetables for a complete meal.
