Ingredients
  

Crust
  • 1 cup crushed digestive biscuits or graham crackers
  • 4 tbsp unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 0.5 cup heavy cream or sour cream
  • 0.75 cup semi-sweet chocolate chips melted
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract

  • Mini muffin tin or small square pan
  • Mixing bowls
  • Hand mixer or stand mixer
  • Spatula

Method
 

  1. Preheat oven and prepare muffin tin or pan.
  2. Mix crust ingredients and press into pan.
  3. Beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, then stir in cream, chocolate, cocoa powder, and vanilla.
  5. Pour filling over crust and bake until centers are set.
  6. Cool, then refrigerate at least 2 hours before serving.
