Ingredients
  

Cranberry Base
  • 12 oz fresh cranberries
  • 0.75 cup granulated sugar
  • 0.5 cup water
Mousse
  • 8 oz cream cheese softened
  • 1 tsp vanilla extract
  • 1 tbsp powdered gelatin
  • 3 tbsp water cold
  • 1.5 cups heavy whipping cream

Method
 

  1. Simmer cranberries with sugar and water, then blend and cool.
  2. Bloom and dissolve gelatin.
  3. Beat cream cheese and vanilla until smooth.
  4. Mix in cranberry purée and gelatin.
  5. Fold in whipped cream.
  6. Chill mousse cups until set.

Notes

Garnish just before serving for best presentation.
