Method
- Preheat oven to 375°F (190°C). Cut a pocket in each chicken breast.
- Season chicken inside and out with salt and pepper.
- Stuff each chicken breast with brie slice and cranberries. Secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2–3 minutes per side.
- Whisk together heavy cream, minced garlic, and thyme. Pour over chicken in skillet.
- Bake chicken 20–25 minutes until internal temperature reaches 165°F (74°C).
- Remove toothpicks, rest 5 minutes, garnish with thyme, and serve.
Notes
You can make ahead by stuffing chicken a few hours before baking.
