Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts
  • 4 oz brie cheese sliced
  • 0.5 cup fresh cranberries
  • 0.5 cup heavy cream
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Cut a pocket in each chicken breast.
  2. Season chicken inside and out with salt and pepper.
  3. Stuff each chicken breast with brie slice and cranberries. Secure with toothpicks.
  4. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken 2–3 minutes per side.
  5. Whisk together heavy cream, minced garlic, and thyme. Pour over chicken in skillet.
  6. Bake chicken 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. Remove toothpicks, rest 5 minutes, garnish with thyme, and serve.

Notes

You can make ahead by stuffing chicken a few hours before baking.
