Ingredients
  

  • 1 cup plain Greek yogurt full-fat or low-fat
  • 0.5 cup crumbled feta cheese
  • 2 tbsp fresh lemon juice
  • 1 clove garlic minced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh mint chopped, optional
  • salt and black pepper to taste
  • 1-2 tbsp water as needed

Method
 

  1. Combine Greek yogurt and feta in a bowl or processor; mash until smooth with some chunks.
  2. Add lemon juice, garlic, and olive oil; mix well.
  3. Fold in dill and mint; season with salt and pepper.
  4. Thin with water if needed for dressing consistency.
  5. Taste and adjust seasonings.
  6. Refrigerate for 30 minutes to meld flavors.

Notes

Store in fridge for up to 5 days. Stir before use.
