Ingredients
  

Pasta Salad
  • 12 oz tri-color rotini pasta
  • 1 cup salami diced
  • 1 cup pepperoni diced
  • 1 cup mozzarella cheese diced
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced
  • 0.5 cup black olives sliced
  • 0.25 cup red onion thinly sliced
  • 2 tbsp fresh parsley chopped
Creamy Italian Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste

Method
 

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together mayonnaise, sour cream, olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  3. In a large mixing bowl, combine pasta, salami, pepperoni, mozzarella, cherry tomatoes, bell peppers, black olives, red onion, and parsley.
  4. Pour dressing over pasta mixture and toss gently to coat evenly.
  5. Cover and refrigerate at least 1 hour before serving.
  6. Taste and adjust seasoning if needed before serving.

Notes

Make ahead for best flavor. Can be customized with different veggies or meats.
