Ingredients
  

Pasta & Vegetables
  • 300 g pasta
  • 1 bunch asparagus cut into pieces
  • 1 tbsp olive oil
  • salt
Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup cream
  • 1 lemon zest
  • 0.5 lemon juice
  • 0.5 cup Parmesan cheese grated
  • 0.25 tsp black pepper
  • 0.25 tsp salt
Finish
  • 2 tbsp parsley

Equipment

  • Large pot
  • Skillet
  • Strainer
  • Wooden spoon

Method
 

  1. Cook pasta and reserve pasta water.
  2. Sauté asparagus until tender-crisp.
  3. Make garlic butter sauce with cream and lemon.
  4. Add Parmesan and melt.
  5. Toss pasta with sauce, adding pasta water as needed.
  6. Add asparagus and mix gently.
  7. Finish with parsley and serve.

Notes

Adjust lemon to taste and add protein if desired.
