  • 4 chicken breasts boneless, skinless
  • 2 zucchini sliced
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 lemon zested and juiced

Method
 

  1. Season chicken and sear in olive oil until golden and cooked through.
  2. Remove chicken and sauté garlic in butter.
  3. Add broth, cream, lemon zest and juice; simmer.
  4. Stir in Parmesan and zucchini; cook until tender.
  5. Return chicken to skillet and simmer briefly before serving.
