Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 2 cups all-purpose flour
  • 0.25 tsp salt
Filling
  • 1.5 cups granulated sugar
  • 0.25 cup all-purpose flour
  • 4 eggs large
  • 0.66 cup lemon juice fresh
  • 1 tbsp lemon zest
  • 0.5 cup heavy cream

Method
 

  1. Preheat oven to 350°F (175°C) and prepare baking pan.
  2. Mix crust ingredients and press into pan. Bake until lightly golden.
  3. Whisk filling ingredients until smooth.
  4. Pour filling over crust and bake until set.
  5. Cool completely and refrigerate before slicing.
  6. Dust with powdered sugar and serve.

Notes

Chill well before slicing for best texture.
