Ingredients
  

Soup Base
  • 6 medium russet potatoes peeled and diced
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 4 tbsp butter
  • 0.25 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup sour cream
  • 6 slices bacon cooked and crumbled
  • 2 green onions sliced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp onion powder

Equipment

  • Large soup pot or Dutch oven
  • Whisk
  • Potato masher
  • Wooden spoon

Method
 

  1. Melt butter in a large pot and cook onion until softened.
  2. Add garlic and cook for 1 minute.
  3. Whisk in flour and cook for 1 to 2 minutes.
  4. Slowly pour in chicken broth while whisking.
  5. Add potatoes and seasonings, then simmer until potatoes are tender.
  6. Mash part of the potatoes for a thicker texture.
  7. Stir in milk, cream, cheese, and sour cream.
  8. Simmer gently until creamy and cheese is melted, then serve with toppings.

Notes

For best texture, do not boil after adding milk and cream. Add extra cheddar and bacon for a fully loaded version.
