Ingredients
  

Slaw Base
  • 4 cups red cabbage thinly shredded
  • 1 cup carrots shredded
  • 0.33 cup green onions sliced
  • 2 tbsp fresh parsley chopped
Creamy Dressing
  • 0.5 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Thinly shred the red cabbage and place it in a large bowl.
  2. Add shredded carrots and sliced green onions.
  3. In a separate bowl whisk together mayonnaise, apple cider vinegar, lemon juice, honey, Dijon mustard, salt, and pepper.
  4. Pour dressing over the cabbage mixture.
  5. Toss the slaw until evenly coated.
  6. Let rest for 10–15 minutes before serving.
  7. Garnish with parsley and serve chilled.

Notes

For a lighter version substitute half the mayonnaise with Greek yogurt.
