Ingredients
  

  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 1 head garlic roasted
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley chopped
  • 1 tsp fresh thyme optional
  • to taste salt
  • to taste black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Slice top of garlic and drizzle with olive oil; wrap in foil.
  2. Roast garlic 30–35 minutes until soft and golden.
  3. Squeeze roasted garlic from skins into a bowl.
  4. Combine goat cheese, cream cheese, roasted garlic, 1 tbsp olive oil, parsley, thyme, salt, and pepper.
  5. Blend until smooth and creamy using a hand mixer or spatula.
  6. Transfer to a serving bowl, drizzle with remaining olive oil, and serve with crackers, crostini, or veggies.

Notes

Can be made ahead and stored in the refrigerator up to 3 days.
