Method
- Preheat oven to 400°F (200°C). Slice top of garlic and drizzle with olive oil; wrap in foil.
- Roast garlic 30–35 minutes until soft and golden.
- Squeeze roasted garlic from skins into a bowl.
- Combine goat cheese, cream cheese, roasted garlic, 1 tbsp olive oil, parsley, thyme, salt, and pepper.
- Blend until smooth and creamy using a hand mixer or spatula.
- Transfer to a serving bowl, drizzle with remaining olive oil, and serve with crackers, crostini, or veggies.

Can be made ahead and stored in the refrigerator up to 3 days.
