Ingredients
  

Pasta
  • 12 oz pasta of choice
  • 2 cups sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 1 cup vegetable broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Skillet
  • Blender or immersion blender
  • Wooden spoon

Method
 

  1. Cook pasta in salted water and reserve pasta water.
  2. Sauté onion and garlic in oil and butter.
  3. Simmer sweet potatoes in broth until tender.
  4. Blend mixture until smooth.
  5. Stir in cream and cheese, then add pasta.

Notes

Use pasta water to adjust sauce consistency as needed.
