Ingredients
  

  • 1 lb chicken breast cut into bite-size pieces
  • 1 tbsp olive oil
  • 0.5 cup peanut butter creamy
  • 1 cup coconut milk full-fat
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp red curry paste
  • 1 tbsp lime juice fresh

Method
 

  1. Cook chicken in oil until lightly golden; remove.
  2. Sauté garlic and ginger until fragrant.
  3. Stir in peanut butter, coconut milk, soy sauce, sugar, and curry paste.
  4. Simmer until smooth, then return chicken to pan.
  5. Cook until chicken is done and sauce thickens.

Notes

Add a splash of coconut milk when reheating.
