Ingredients
  

  • 8 oz pasta penne, fettuccine, or spaghetti
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 2 tbsp tomato paste
  • 0.5 cup heavy cream
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • 0.25 tsp red chili flakes optional
  • 0.25 cup Parmesan cheese grated
  • Fresh basil leaves for garnish

Equipment

Method
 

  1. Cook pasta according to package instructions and set aside.
  2. Sauté garlic in olive oil until fragrant.
  3. Add cherry tomatoes and tomato paste; cook until tomatoes soften.
  4. Stir in cream, salt, pepper, and optional chili flakes; simmer until sauce thickens slightly.
  5. Add cooked pasta to the sauce and toss to coat.
  6. Top with Parmesan and garnish with basil; serve warm.

Notes

Adjust creaminess by adding a splash of pasta water if needed.
