Ingredients
  

Filling
  • 8 slices bacon
  • 8 large eggs
  • 0.25 cup milk
  • 1.5 cups shredded cheddar cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Assembly
  • 10-12 egg roll wrappers
  • vegetable oil for frying
  • water for sealing

Method
 

  1. Cook bacon until crispy, drain, and crumble.
  2. Whisk eggs with milk, salt, and pepper. Scramble until just set.
  3. Mix crumbled bacon and cheese into scrambled eggs.
  4. Place filling on egg roll wrapper, fold, and seal with water.
  5. Heat oil to 350°F. Fry egg rolls 3-4 minutes per side until golden.
  6. Drain on paper towels and serve hot.

Notes

For air fryer version: Cook at 400°F for 8-10 minutes, flipping halfway. Freeze uncooked egg rolls for up to 3 months.
