Ingredients
  

Chicken Bites
  • 1 lb chicken breast cut into 1–2 inch pieces
  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs beaten
  • 1.5 cups panko breadcrumbs
  • vegetable oil for frying
Bang Bang Sauce
  • 0.25 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1-2 tsp sriracha adjust to taste
  • 1 tsp honey
  • 1 tsp lime juice
Garnish
  • green onions chopped
  • sesame seeds toasted

Method
 

  1. Combine flour, cornstarch, garlic powder, salt, and black pepper in a medium bowl.
  2. Place beaten eggs in a separate bowl and panko breadcrumbs in another bowl.
  3. Dip chicken pieces in flour mixture, then egg, then panko breadcrumbs.
  4. Heat oil to 350°F (175°C) and fry chicken in batches until golden and cooked through, about 3–4 minutes.
  5. Whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice to make Bang Bang sauce.
  6. Toss fried chicken bites in Bang Bang sauce until coated.
  7. Plate and garnish with chopped green onions and sesame seeds.

Notes

Adjust sriracha to your desired spice level. Serve immediately for maximum crispiness.
