Ingredients
  

Vegetables
  • 1 small head green cabbage finely shredded, about 6-7 cups
  • 2 medium carrots grated
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
Batter
  • 3 large eggs
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
Frying
  • 3-4 tbsp neutral oil for frying

Equipment

  • Large mixing bowl
  • Skillet or frying pan
  • Spatula
  • Grater or food processor

Method
 

  1. Finely shred the cabbage, massage with salt, let sit, then squeeze out excess moisture.
  2. Combine shredded cabbage with grated carrots, onion, and garlic in a bowl.
  3. Whisk eggs with seasonings and flour to form a batter.
  4. Mix batter into vegetables until well coated.
  5. Heat oil in skillet over medium heat.
  6. Form patties and fry 3-4 minutes per side until golden and crispy.
  7. Drain on paper towels and serve hot.

Notes

Squeeze cabbage well for crispiness. Re-crisp leftovers in oven.
