  • 0.5 cup pickle juice
Breading
  • 0.5 cup flour
  • 2 eggs beaten
  • 0.75 cup breadcrumbs
  • 0.5 cup Parmesan cheese finely grated

Method
 

  1. Marinate chicken briefly in pickle juice and pat dry.
  2. Prepare flour, egg, and breadcrumb-Parmesan stations.
  3. Coat chicken in flour, egg, then breadcrumb mixture.
  4. Bake at 425°F for 20–25 minutes, flipping halfway.
  5. Rest briefly before serving.
