Ingredients
  

Chicken
  • 4 bone-in, skin-on chicken thighs
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme or rosemary chopped
  • 1 lemon cut into wedges

Method
 

  1. Pat chicken dry and season with paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken skin-side down 5–7 minutes until golden and crisp.
  4. Flip chicken and cook 5–7 minutes on the other side.
  5. Reduce heat, add butter, garlic, and herbs, and baste chicken 2–3 minutes.
  6. Check internal temperature: 165°F (74°C). Remove, rest 5 minutes, and serve with lemon wedges.

Notes

Do not overcrowd pan to maintain crispiness.
