Ingredients
  

Chicken
  • 3 lb chicken pieces mixed cuts
Marinade
  • 2 cups buttermilk
  • 2 eggs beaten
Coating
  • 2.5 cups all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Equipment

  • Large pot or deep skillet
  • Thermometer
  • Wire rack

Method
 

  1. Soak chicken in seasoned buttermilk for at least 2 hours.
  2. Prepare egg wash and seasoned flour mixture.
  3. Coat chicken in egg, then dredge in flour mixture.
  4. Rest coated chicken before frying.
  5. Fry chicken at 350°F until golden and cooked through.

Notes
