Ingredients
  

Filling
  • 1 lb ground beef
  • 4 cloves garlic minced
  • 2-4 Thai bird's eye chilies chopped, adjust to taste
  • 1 small shallot finely chopped
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1-2 cups fresh Thai basil leaves
Assembly & Frying
  • 12-15 rice paper wrappers
  • vegetable oil for frying

  • Wok or skillet
  • Deep pan for frying

Method
 

  1. Stir-fry garlic, chilies, and shallot in oil until fragrant.
  2. Add ground beef and cook until browned.
  3. Stir in sauces and sugar; cook until thickened.
  4. Add Thai basil and wilt; cool filling.
  5. Soften rice paper in warm water and fill with beef mixture.
  6. Roll tightly and seal.
  7. Fry in hot oil until golden and crispy.
  8. Drain and serve with dipping sauce.

Notes

Use fresh Thai basil for authentic flavor. Fry in batches to maintain oil temperature. Adjust spice to preference.
