Ingredients
  

Potatoes & Base
  • 3 lbs russet potatoes thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tbsp butter melted
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 2 tbsp flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp thyme optional

Equipment

  • Slow cooker (crockpot)
  • Mixing bowl

Method
 

  1. Grease crockpot with butter or cooking spray.
  2. Whisk cream, milk, butter, garlic, onion, flour, and seasonings until smooth.
  3. Layer sliced potatoes, cheese, and cream mixture in alternating layers.
  4. Repeat layers until ingredients are used, finishing with cheese on top.
  5. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
  6. Let rest 10 minutes before serving.

Notes

Letting the dish rest after cooking helps the sauce thicken and improves texture.
