Ingredients
  

Salad
  • 2 cups grilled chicken sliced
  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 carrot shredded
  • 1 red bell pepper sliced
  • 1 cucumber chopped
  • 3 green onions chopped
  • 0.25 cup cilantro chopped
  • 0.25 cup roasted peanuts chopped
Peanut Dressing
  • 0.33 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 garlic clove minced
  • 1 tsp ginger grated
  • warm water to thin

Method
 

  1. Whisk peanut dressing ingredients until smooth, thinning with warm water as needed.
  2. Add cabbages, carrots, bell pepper, cucumber, green onion, and cilantro to a bowl.
  3. Top with sliced chicken.
  4. Drizzle with peanut dressing and toss to coat.
  5. Garnish with chopped peanuts and serve.

Notes

For a spicy version, add sriracha to the dressing.
