Ingredients
  

  • 1.5 cups cooked quinoa cooled
  • 1.5 cups cucumber diced
  • 0.25 cup red onion finely diced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Combine quinoa, cucumber, onion, feta, and herbs.
  2. Whisk olive oil, lemon juice, zest, salt, and pepper.
  3. Toss salad with dressing and chill briefly.
