Dopiazeh Aloo

A traditional Persian potato curry made with onions, turmeric, and tender simmered potatoes.

Ingredients
  

  • 4 potatoes peeled and cubed
  • 2 onions thinly sliced
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp turmeric
  • 1 tbsp tomato paste
  • 1 cup water or vegetable broth
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Equipment

  • Large skillet or pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Sauté onions in olive oil until golden and soft.
  2. Add garlic and turmeric; cook briefly until fragrant.
  3. Stir in tomato paste and cook 1–2 minutes.
  4. Add potatoes, salt, and pepper; stir to coat.
  5. Add liquid, cover, and simmer until potatoes are tender.

Notes

Cook onions slowly for best flavor.
