Ingredients
  

  • 3 lb pork loin
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic crushed
  • 1 onion sliced
  • 1 cup chicken broth

Equipment

  • Dutch oven
  • Tongs
  • Meat thermometer

Method
 

  1. Season pork loin generously with salt and pepper.
  2. Sear pork loin in hot Dutch oven until browned on all sides.
  3. Remove pork and sauté onion and garlic in butter.
  4. Add broth and return pork to pot with herbs.
  5. Cover and roast at 325°F (165°C) until internal temp reaches 145°F.
  6. Rest pork 10 minutes before slicing.

Notes

Always rest pork before slicing to retain juices.
