Method
- Season pork loin generously with salt and pepper.
- Sear pork loin in hot Dutch oven until browned on all sides.
- Remove pork and sauté onion and garlic in butter.
- Add broth and return pork to pot with herbs.
- Cover and roast at 325°F (165°C) until internal temp reaches 145°F.
- Rest pork 10 minutes before slicing.
Notes
Always rest pork before slicing to retain juices.
