Ingredients
  

Chicken & Vegetables
  • 2 cups cooked chicken shredded or thinly sliced
  • 2 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup carrots shredded
  • 1 red bell pepper thinly sliced
  • 3 scallions chopped
  • 1/4 cup cilantro roughly chopped
Crunch & Garnish
  • 1/4 cup chopped peanuts
  • 1 tbsp sesame seeds
  • Optional wonton strips for extra crunch
Peanut Dressing
  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 lime juice of 1
  • 1–2 tsp water to thin
  • Optional tsp sriracha for heat

Equipment

  • Mixing bowls

Method
 

  1. Prepare vegetables and combine in a large mixing bowl.
  2. Add shredded or sliced cooked chicken to the vegetables.
  3. Whisk together peanut butter, soy sauce, honey, sesame oil, rice vinegar, lime juice, and water until smooth.
  4. Pour dressing over salad and toss gently to coat.
  5. Sprinkle peanuts, sesame seeds, and optional wonton strips over the top.
  6. Serve immediately or refrigerate briefly for slightly chilled salad.

Notes

For maximum crunch, add nuts and wontons just before serving.
