Ingredients
  

Rice Base
  • 1 cup long-grain rice uncooked
  • 2 cups vegetable broth
  • 1 cup mixed vegetables frozen peas, carrots, corn
  • 2 eggs lightly beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 2 green onions sliced
  • 1 tbsp butter
  • 0.5 tsp black pepper

Equipment

  • Baking dish
  • Mixing spoon
  • Aluminum foil
  • Measuring cups

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In the baking dish combine rice, vegetable broth, mixed vegetables, soy sauce, sesame oil, garlic, and pepper.
  3. Place small pieces of butter across the top of the mixture.
  4. Cover tightly with foil and bake for 35 minutes.
  5. Remove from oven, stir in beaten eggs, and cover again.
  6. Bake another 10 minutes until rice is tender and eggs are cooked.
  7. Fluff with a fork and stir in green onions before serving.

Notes

You can add cooked chicken, shrimp, or tofu for extra protein.
