Method
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In the baking dish combine rice, vegetable broth, mixed vegetables, soy sauce, sesame oil, garlic, and pepper.
- Place small pieces of butter across the top of the mixture.
- Cover tightly with foil and bake for 35 minutes.
- Remove from oven, stir in beaten eggs, and cover again.
- Bake another 10 minutes until rice is tender and eggs are cooked.
- Fluff with a fork and stir in green onions before serving.
Notes
You can add cooked chicken, shrimp, or tofu for extra protein.
