Ingredients
  

Filling
  • 2 cups crushed vanilla sandwich cookies
  • 6 oz cream cheese softened
  • 1 cup white chocolate melted
  • 1 tsp vanilla extract
  • blue gel food coloring
Coating
  • 1.5 cups white chocolate melted
  • 1 tbsp coconut oil optional
  • 0.5 cup blue sanding sugar

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Crush cookies into fine crumbs and mix with cream cheese, melted white chocolate, and vanilla.
  2. Tint the mixture blue and roll into balls.
  3. Chill balls for 20 minutes in the freezer.
  4. Dip each ball into melted white chocolate and top with blue sanding sugar.
  5. Let set, then refrigerate until serving.

Notes

Chill the truffles before dipping for a perfectly smooth coating.
