  • 2 cups all-purpose flour divided
  • 0.75 cup granulated sugar divided
  • 1 cup unsalted butter cold, cubed
  • 0.25 tsp salt
  • 2 cups fresh cranberries
  • 4 eggs large
  • 0.75 cup fresh lemon juice
  • 2 tbsp lemon zest

Method
 

  1. Bake shortbread crust until lightly golden.
  2. Mix cranberry lemon filling and pour over crust.
  3. Bake until set and cool completely.
